Madeleines – Praline with pecans


Madeleines with a gourmet praline heart.

Preparation time

30 min preparation + 15 min baking + 1 hour resting


6 madeleines





  • 80g Zùsto
  • 100g of flour
  • 100g butter
  • 2 eggs
  • 1 tsp baking powder
  • 1 pinch of salt
  • 100g pecans
  • 3 tsp hazelnut oil 




  • 1 mixer
  • 1 oven
  • 1 blender
  • madeleine baking tin

Preparation method


  1. Beat the eggs together with the Zùsto and the pinch of salt.
  2. Stir in the flour and yeast.
  3. Melt your butter and add it to the mixture.
  4. Leave the dough in the fridge for at least an hour.
  5. Divide the dough into your madeleine moulds
  6. Bake for 15 minutes at 180 degrees.
  7. In a blender, chop up the pecans with the hazelnut oil.
  8. Place your mix into a piping bag.
  9. Decorate your madeleines once they have cooled.
