You won’t be surprised to learn that I prefer to start my day with something sweet.
I don’t usually worry about the extra calories, but if there’s an alternative that doesn’t compromise taste, I’ll definitely go with it.
I’m sure you’re going to love these banana muffins made with guilt-free Zùsto. Full of flavour, sweet and soft, each muffin contains 284 kcal instead of 500 kcal on average for the classic version. I’ve discovered a new friend in the kitchen, and I’m sure it’s going to be kept very busy!
250 g self-raising flour
150 g of Zùsto
1 teaspoon of baking powder
1 teaspoon cinnamon powder
1/2 teaspoon nutmeg
1 pinch of salt
150 g banana purée (about 2 small bananas)
70 g milk
120 g sunflower oil
100 g blueberries (frozen or fresh)
Pour the flour, Zùsto, baking powder, cinnamon powder, nutmeg and salt into a bowl.
In a separate bowl, combine the egg, mashed bananas, milk and sunflower oil.
Mix with a whisk until you obtain a smooth mixture.
Add the wet ingredients to the dry ingredients and mix briefly with a spatula or wooden spoon (tip: if you want your muffins to have a sandy consistency, don’t mix too much)
Finally, add the blueberries.
Pour the batter into paper muffin tins and bake the muffins for about 25-30 minutes in a preheated 180 degree oven.
Tip: they are so delicious when they’re warm!
